On my remote and Kindle, channels appear in numeric channel order (which I like as I am used to the numbers and my satellite provider puts channels in groups - e.g. 400 to 420 are news channels etc.). On my iPad they appear in alphabetical order. The only work around I could think of was to rename all my channels with the number at the start of the name... Messy and time consuming.
