Every time I use composer I have to go through the right-click routine to collapse rooms numerous times. Is there a way to get it to default to this? Scrolling through everything uncollapsed gets to be a time wasting PITA.

Nope

Can one not simply collapse all? I know I click something, but I am sure that it is a simple single click?

It would be nice to have a keyboard shortcut to do this as well.

Yes, that's what I do now. But that's a PITA to do 20 or 30 times in an hour. A shortcut key to toggle it would be good, an option to default it would be better and both would be best. 

I'm very glad to have HE vs what Savant and others offer but it really does feel like I've stepped back in time 30 years.

I have put in a feature request for this a few weeks ago...
